FSSAI Food License: Which License Do You Need and How to Apply

Under Indian food safety laws, every food business operator (FBO) must register with the FSSAI (Food Safety and Standards Authority of India). Whether you run a home kitchen, a restaurant, a packaging unit, or a food export house, operating without an FSSAI number is illegal and can lead to heavy government fines. Printing a valid FSSAI number on your packaging builds customer trust and is mandatory if you want to sell in supermarkets, retail shops, or online platforms like Swiggy, Zomato, and Amazon.

The Three Levels of FSSAI Food Licenses

FSSAI licenses are divided into three types based on your annual sales and business size:

  • **Basic FSSAI Registration**: For small home kitchens, food stalls, and small retail shops with annual sales below ₹12 Lakhs.
  • **FSSAI State License**: For medium-sized restaurants, distributors, and processing units with annual sales between ₹12 Lakhs and ₹20 Crores.
  • **FSSAI Central License**: For large manufacturers, multi-state operators, food importers, and all food exporters, regardless of sales. If you export food, you must get a Central License.

Simple Document Checklist for FSSAI

To apply for a State or Central FSSAI license, you need to upload these basic documents:

  • **Floor Plan**: A simple map of your food preparation area showing where machines are kept.
  • **Director/Proprietor ID**: Government ID cards and address proofs of the business owners.
  • **Equipment List**: A list of machines you use (like ovens, packaging machines, or mixers) and their capacity.
  • **Water Test Report**: A certificate from an NABL-approved lab showing that the water used in your food is clean and safe.
  • **Raw Material Source**: A list of major suppliers you buy ingredients from to ensure safety.

Applying Online Through the FoSCoS Portal
